For the Sticky Rice:
1 cup sweet glutinous rice (sticky rice), rinsed several times until water runs clear (about 190g)
1.5 cups water (about 360ml)
1/2 cup coconut milk (full-fat canned) (about 120ml)
2 tablespoons granulated sugar (about 25g)
1/4 teaspoon sea salt (about 1.25g)
For the Topping:
2 ripe mangoes, peeled and diced (about 2 cups / 360g)
1/4 cup coconut milk (full-fat canned), for drizzling (about 60ml)
1 tablespoon granulated sugar (about 12g)
1/2 teaspoon toasted sesame seeds (about 2g)
Fresh mint leaves, for garnish (optional)
