900g lamb chops (about 8), cut from the French rack
6 garlic cloves, finely chopped or pressed
4 tablespoons olive oil, equal parts
2 tablespoons fresh parsley, finely chopped (or 2 teaspoons dried parsley), plus more for garnish
2 teaspoons fresh rosemary, finely chopped
2 teaspoons Tabasco red pepper sauce
1.5 teaspoons fine salt
1 teaspoon freshly ground black pepper

120ml dry white wine or chicken stock
