Grilled flank steak caprese with balsamic dressing

1️⃣Prepare the steak: Pat the flank steak dry with paper towels. Rub olive oil over the steak, then season with garlic powder, oregano, salt, and black pepper. Set aside to marinate for 15-20 minutes.
2️⃣Make the balsamic dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper until well combined. Set aside.
3️⃣Preheat the grill: Preheat your grill to medium-high heat (about 400°F/200°C). Lightly oil the grates to prevent sticking.
Grill the steak: Place the flank steak on the grill and cook for 4-5 minutes per side, or until it reaches your desired level of doneness (135°F/57°C for medium-rare). Remove the steak from the grill and let it rest for 5-10 minutes.
4️⃣Assemble the caprese: Slice the steak thinly against the grain. Arrange the steak slices on a serving platter, alternating with slices of fresh mozzarella and cherry tomatoes. Tuck fresh basil leaves between the layers.
