Step 1: Prepare the Roast Beef
Preheat your oven to 375°F (190°C).
Pat the beef roast dry with paper towels.
Rub the roast with olive oil, then season generously with salt, pepper, garlic powder, onion powder, thyme, rosemary, and smoked paprika if using.
Heat a skillet over medium-high heat. Once hot, sear the roast on all sides until browned (about 3–4 minutes per side).
Transfer the roast to a roasting pan or baking dish and place it in the oven. Roast for 1 hour to 1 hour 30 minutes (depending on the size of the roast and desired doneness). Use a meat thermometer for accuracy:
Rare: 125°F (52°C)
Medium-rare: 135°F (57°C)
Medium: 145°F (63°C)
Well-done: 160°F (71°C)
Once done, remove from the oven and let the roast rest for 10–15 minutes before slicing.
Step 2: Make the Cranberry Glaze
In a saucepan, combine cranberries, orange juice, honey (or brown sugar), balsamic vinegar, and Dijon mustard.
Bring to a simmer over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens (about 10 minutes).
If you’d like a thicker sauce, mix cornstarch and water together and stir it into the sauce, simmering for another 2 minutes until thickened.
Taste the glaze and adjust sweetness or acidity as needed (adding more honey or vinegar if desired).
Step 3: Serve
Slice the roast beef against the grain into thick slices.
Drizzle the cranberry glaze over the slices or serve it on the side as a dipping sauce.
Garnish with fresh herbs like rosemary or thyme for added flavor and color.
