Zucchini Lasagna Rolls

Prepare the Zucchini:

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips using a mandoline or a sharp knife. Aim for about 1/8 inch thick.
  3. Lightly salt the zucchini strips and let them sit for about 10 minutes to draw out excess moisture. Pat them dry with paper towels.

Make the Filling:

  1. In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, oregano, basil, salt, and pepper. Mix until well combined.

Assemble the Rolls:

  1. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  2. Take one zucchini strip, place a spoonful of the ricotta mixture at one end, and roll it up tightly. Place the roll seam-side down in the baking dish.
  3. Repeat with the remaining zucchini strips and filling, arranging them in the baking dish.

Add Sauce and Cheese:

  1. Once all the rolls are in the dish, pour the remaining marinara sauce over the top.
  2. Sprinkle the remaining mozzarella cheese evenly over the sauce.

Bake:

  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve:

  1. Let the zucchini lasagna rolls cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
