- Slice the zucchinis lengthwise into thin strips using a mandoline or a sharp knife. Aim for about 1/8 inch thick.
- Lightly salt the zucchini strips and let them sit for about 10 minutes to draw out excess moisture. Pat them dry with paper towels.
Make the Filling:
- In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, oregano, basil, salt, and pepper. Mix until well combined.
Assemble the Rolls:
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Take one zucchini strip, place a spoonful of the ricotta mixture at one end, and roll it up tightly. Place the roll seam-side down in the baking dish.
- Repeat with the remaining zucchini strips and filling, arranging them in the baking dish.
Add Sauce and Cheese:
- Once all the rolls are in the dish, pour the remaining marinara sauce over the top.
- Sprinkle the remaining mozzarella cheese evenly over the sauce.
Bake:
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Serve:
- Let the zucchini lasagna rolls cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
