Directions:

Cook the sausage: Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 3-4 minutes. Remove and set aside.

Sauté aromatics: In the same skillet, add the diced onion and garlic. Sauté until softened and fragrant, about 2-3 minutes.

Make the sauce: Stir in the chicken broth, heavy cream, and diced tomatoes. Season with paprika, salt, and pepper. Bring to a gentle simmer.

Add pasta: Stir in the uncooked pasta, ensuring it’s submerged in the liquid. Cover and simmer for 12-15 minutes, stirring occasionally, until the pasta is tender.

Combine and melt cheese: Return the cooked sausage to the skillet and stir in mozzarella cheese until melted and creamy.

Serve: Garnish with fresh parsley if desired and serve hot.
