Taco Casserole:

.  1 lb lean ground beef
.  1 medium yellow onion diced
 1 can of RO-TEL original undrained
 1/4 cup water
 2 cups freshly grated sharp cheddar cheese
 3 cups corn chips

Toppings:

1 jalapeno optional – sliced and diced to taste
1 cup shredded lettuce
8 cherry tomatoes halved
2 green onions sliced
2 tbsp diced cilantro
1/4 cup sour cream
1/4 cup salsa
