Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roast the onions: Rub the onion halves with olive oil and season with salt and pepper. Place them cut-side down on the baking sheet and roast for 25-30 minutes, or until the onions are tender and slightly caramelized.
Prepare the creamy Parmesan sauce: In a small saucepan, melt the butter over medium heat. Stir in the garlic powder, thyme, and heavy cream. Simmer for 2-3 minutes, then add the grated Parmesan cheese. Stir until the cheese melts and the sauce is smooth.
Assemble the dish: Transfer the roasted onions to a baking dish, cut-side up. Pour the Parmesan cream sauce over the onions, making sure they’re well coated.
Bake: Return the dish to the oven and bake for an additional 10-15 minutes, or until the sauce is bubbly and golden.
Garnish and serve: Sprinkle fresh parsley on top and serve hot as a rich and flavorful side dish.
