Loaded Potato Soup

In a large pot, combine the potatoes, onion, and chicken broth. Bring to a boil over medium-high heat.
Reduce heat to medium-low and simmer until the potatoes are tender, about 15-20 minutes.
Using a potato masher, slightly mash the potatoes in the pot to thicken the soup.
Stir in the heavy cream, cheddar cheese, and sour cream. Cook until the cheese is melted and the soup is heated through.
Season with salt and pepper to taste.
Ladle the soup into bowls and top with chopped bacon and sliced green onions before serving.
