Khachapuri (Georgian Cheese Bread)

Ingredients:

3 cups all-purpose flour

1 tablespoon sugar

2 teaspoons active dry yeast

1 teaspoon salt

1 cup warm water (110°F)

1 tablespoon olive oil

1 cup ricotta cheese

1 1/2 cups mozzarella cheese, shredded

1/2 cup feta cheese, crumbled

1 egg (for topping)

2 tablespoons butter (for topping)

Instructions:

Make the Dough:

In a large bowl, combine the flour, sugar, yeast, and salt. Add the warm water and olive oil, stirring to form a dough. Knead the dough for 5-7 minutes until smooth and elastic. Cover the dough with a clean towel and let it rise in a warm place for 1 hour, or until it doubles in size.

Prepare the  Cheese Filling:

In a medium bowl, mix together the ricotta, mozzarella, and feta cheeses. Set aside.
