Traditional Chinese Vegetarian Spring Rolls

Ingredients:

  • 2 tablespoons vegetable oil (plus more for frying)
  • 2 cups finely shredded cabbage
  • 1 cup grated carrot
  • ½ cup bean sprouts (optional)
  • ½ cup finely sliced mushrooms (shiitake or button)
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and white pepper to taste
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for sealing)
  • 12–15 spring roll wrappers (store-bought or homemade)
