Directions:

  1. Prepare the apple filling:
    In a medium saucepan, combine the chopped apples, sugar, cinnamon, nutmeg (if using), lemon juice, and butter. Cook over medium heat for 5-7 minutes, stirring occasionally, until the apples soften and the mixture thickens slightly. Stir in the vanilla extract. Remove from heat and set aside to cool.
  2. Prepare the puff pastry:
    Roll out the puff pastry sheet on a lightly floured surface to smooth it out. If the pastry is too thick, you can roll it a little thinner (about 1/8-inch thick).
  3. Cut the doughnuts:
    Use a round cutter (about 3-4 inches in diameter) to cut circles from the puff pastry. Then, use a smaller cutter or the tip of a piping nozzle to cut a hole in the center of each circle to create the doughnut shape.
  4. Fill the doughnuts:
    Spoon a small amount of the cooled apple filling into the center of half of the doughnut shapes. Top with another doughnut shape to create a pocket. Press the edges together gently to seal the filling inside.
  5. Heat the oil:
    In a large pot or deep skillet, heat vegetable oil to 350°F (175°C). You’ll need enough oil to submerge the doughnuts.
  6. Fry the doughnuts:
    Carefully drop the filled puff pastry doughnuts into the hot oil, a few at a time, without overcrowding the pot. Fry for about 2-3 minutes per side, or until golden brown and puffed.
