Homemade Upside-Down Peach Tarts

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
  2. Prepare the Caramelized Base:
    • On the parchment-lined tray, arrange 6 small mounds of brown sugar (about 1/2 tbsp each), spaced apart.
    • Place a few small dots of butter on top of each sugar mound.
    • Arrange 3–4 peach slices in a fan shape over each pile.
    • Sprinkle lightly with cinnamon, salt, and a dash of vanilla extract if using.
  3. Cut the Puff Pastry:
    • Roll out puff pastry slightly and cut into 6 rectangles (or circles using a cup or cutter).
    • Place each pastry piece on top of the peaches, pressing down slightly around the edges.
  4. Bake:
    • Bake for 18–22 minutes, or until the puff pastry is golden and crisp.
  5. Flip and Serve:
    • Remove from oven and let sit for 1–2 minutes.
    • Carefully flip each tart using a spatula (they should release easily thanks to the parchment).
    • Drizzle with honey or syrup and serve warm with yogurt or whipped cream.
