Instructions:
- Preheat Oven:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Prepare the Caramelized Base:
- On the parchment-lined tray, arrange 6 small mounds of brown sugar (about 1/2 tbsp each), spaced apart.
- Place a few small dots of butter on top of each sugar mound.
- Arrange 3–4 peach slices in a fan shape over each pile.
- Sprinkle lightly with cinnamon, salt, and a dash of vanilla extract if using.
- Cut the Puff Pastry:
- Roll out puff pastry slightly and cut into 6 rectangles (or circles using a cup or cutter).
- Place each pastry piece on top of the peaches, pressing down slightly around the edges.
- Bake:
- Bake for 18–22 minutes, or until the puff pastry is golden and crisp.
- Flip and Serve:
- Remove from oven and let sit for 1–2 minutes.
- Carefully flip each tart using a spatula (they should release easily thanks to the parchment).
- Drizzle with honey or syrup and serve warm with yogurt or whipped cream.
