For the bottom layer (crust):
- 1 box yellow cake mix (or 2 cups all-purpose flour + 1 tsp baking powder + 1/2 cup sugar if from scratch)
- 1/2 cup (115g) unsalted butter, melted
- 1 large egg
For the gooey lemon layer:
- 8 oz (225g) cream cheese, softened
- 2 large eggs
- 1/2 cup (115g) unsalted butter, softened
- 2 tbsp lemon juice (freshly squeezed)
- 1 tbsp lemon zest
- 3 cups (360g) powdered sugar
- 1/2 tsp vanilla extract (optional)
