 Gooey Lemon Butter Cake

Ingredients:

For the bottom layer (crust):

  • 1 box yellow cake mix (or 2 cups all-purpose flour + 1 tsp baking powder + 1/2 cup sugar if from scratch)
  • 1/2 cup (115g) unsalted butter, melted
  • 1 large egg

For the gooey lemon layer:

  • 8 oz (225g) cream cheese, softened
  • 2 large eggs
  • 1/2 cup (115g) unsalted butter, softened
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 3 cups (360g) powdered sugar
  • 1/2 tsp vanilla extract (optional)
