Instructions:
- Prep the Chicken:
- Season chicken pieces with salt, pepper, garlic powder, and paprika.
- Let sit while you make the batter.
- Make the Batter:
- In a bowl, whisk together flour, cornstarch, baking powder, salt, and pepper.
- Add egg and cold water or soda water; whisk until smooth and slightly thick (like pancake batter).
- Heat the Oil:
- Heat about 1–2 inches of oil in a heavy skillet or pot to 350°F (175°C).
- Batter & Fry:
- Dip chicken pieces into the batter, letting excess drip off.
- Carefully place into hot oil and fry for 4–6 minutes, turning once, until golden brown and cooked through.
- Drain & Serve:
- Remove and drain on paper towels or a wire rack.
- Serve hot with dipping sauces like honey mustard, hot sauce, or ranch.
