Instructions:
- Preheat Oven:
- Preheat to 375°F (190°C). Line a baking tray with foil or parchment, or use a loaf pan.
- Make the Meat Mixture:
- In a large bowl, combine ground meat, onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, and seasonings.
- Mix just until combined (don’t overwork it).
- Assemble the Meatloaf:
- On a sheet of parchment or foil, flatten the meat mixture into a rectangle (about ½ inch thick).
- Spread mashed potatoes down the center, leaving space at the edges.
- Sprinkle cheese over the mashed potatoes.
- Roll and Seal:
- Carefully lift the sides of the meat and fold it over the filling, sealing the edges to form a loaf.
- Transfer to baking tray or loaf pan, seam side down.
- Bake:
- Brush the top with ketchup or BBQ sauce if using.
- Bake for 50–60 minutes, or until cooked through (internal temp should be 160°F / 71°C).
- Let rest 10 minutes before slicing.
