Cheesy Stuffed Potato Meatloaf

 Instructions:

  1. Preheat Oven:
    • Preheat to 375°F (190°C). Line a baking tray with foil or parchment, or use a loaf pan.
  2. Make the Meat Mixture:
    • In a large bowl, combine ground meat, onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, and seasonings.
    • Mix just until combined (don’t overwork it).
  3. Assemble the Meatloaf:
    • On a sheet of parchment or foil, flatten the meat mixture into a rectangle (about ½ inch thick).
    • Spread mashed potatoes down the center, leaving space at the edges.
    • Sprinkle cheese over the mashed potatoes.
  4. Roll and Seal:
    • Carefully lift the sides of the meat and fold it over the filling, sealing the edges to form a loaf.
    • Transfer to baking tray or loaf pan, seam side down.
  5. Bake:
    • Brush the top with ketchup or BBQ sauce if using.
    • Bake for 50–60 minutes, or until cooked through (internal temp should be 160°F / 71°C).
    • Let rest 10 minutes before slicing.
