- Lay out 4 slices of bread and spread Dijon mustard (if using) on one side.
- Place a slice of Gruyère cheese and a slice (or two) of ham on each piece of bread.
- Top with the remaining bread slices to make sandwiches.
- Prepare the Custard:
- In a shallow bowl, whisk together eggs, milk, salt, and nutmeg.
- Dip the Sandwiches:
- Heat butter in a large skillet over medium heat.
- Dip each sandwich into the custard mixture, ensuring both sides are coated, but avoid soaking too long to prevent sogginess.
- Cook the French Toast Sandwiches:
- Place the dipped sandwiches into the skillet and cook for 3-4 minutes on each side, or until golden brown and the cheese is melted.
- Optional Béchamel Sauce (for serving):
- In a small saucepan, melt 2 tbsp butter over medium heat.
- Stir in 2 tbsp all-purpose flour and cook for 1 minute.
- Gradually whisk in 1 cup (240 ml) warm milk, stirring until thickened.
- Season with salt, pepper, and a pinch of nutmeg. Spoon the sauce over the sandwiches.
- Serve:
- Serve warm, optionally dusted with powdered sugar for a sweet-savory contrast or with a drizzle of honey.
