Directions
Step 1: Make the Crust
- Crush the shortbread cookies into fine crumbs using a food processor or by placing them in a resealable bag and using a rolling pin.
- In a bowl, mix the cookie crumbs with melted butter until the mixture resembles wet sand.
- Press the crumb mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon or a flat-bottomed glass to compact it firmly.
- Refrigerate the crust for at least 20 minutes to set.
Step 2: Prepare the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
- Add powdered sugar and vanilla extract, and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth.
- Swirl in 1/4 cup caramel sauce gently with a spatula.
Step 3: Assemble the Cheesecake
- Spread the cheesecake filling evenly over the chilled crust, smoothing the top with a spatula.
- Refrigerate for at least 6 hours, or ideally overnight, to set.
Step 4: Add the Toppings
- Before serving, drizzle caramel sauce and chocolate ganache over the top of the cheesecake.
- Sprinkle the chopped Twix bars evenly across the surface.
- Garnish with extra shortbread cookie crumbs if desired.
Step 5: Serve
- Carefully release the cheesecake from the springform pan and transfer it to a serving platter.
- Slice and serve chilled.
Tips
- For a firmer crust: Bake the crust at 350°F (175°C) for 8 minutes, then cool completely before adding the filling.
- Use room-temperature cream cheese: This ensures a smooth and lump-free filling.
- Make ahead: This cheesecake can be made a day or two in advance, making it perfect for parties.
