Polish Sausage, Sauerkraut, and Potatoes Skillet Recipe

Instructions:

  1. Cook the potatoes:
    • Heat olive oil or butter in a large skillet over medium heat. Add diced potatoes and cook, stirring occasionally, until golden brown and tender (about 10-15 minutes). Season with salt and pepper. Remove and set aside.
  2. Cook the sausage:
    • In the same skillet, add the sliced kielbasa. Cook until browned on both sides (about 5-7 minutes). Remove and set aside.
  3. Sauté the onions and garlic:
    • Add a little more oil if needed. Cook the onions until softened (about 3-4 minutes). Add the minced garlic and sauté for 1 minute.
  4. Combine with sauerkraut:
    • Stir in the sauerkraut, chicken broth, paprika, and caraway seeds. Cook for 5 minutes to let the flavors meld.
  5. Finish the dish:
    • Return the potatoes and sausage to the skillet. Stir everything together and heat for 2-3 minutes. Adjust seasoning with salt and pepper.
  6. Serve:
    • Garnish with fresh parsley or dill, if desired, and serve warm.
