Instructions:
- Cook the potatoes:
- Heat olive oil or butter in a large skillet over medium heat. Add diced potatoes and cook, stirring occasionally, until golden brown and tender (about 10-15 minutes). Season with salt and pepper. Remove and set aside.
- Cook the sausage:
- In the same skillet, add the sliced kielbasa. Cook until browned on both sides (about 5-7 minutes). Remove and set aside.
- Sauté the onions and garlic:
- Add a little more oil if needed. Cook the onions until softened (about 3-4 minutes). Add the minced garlic and sauté for 1 minute.
- Combine with sauerkraut:
- Stir in the sauerkraut, chicken broth, paprika, and caraway seeds. Cook for 5 minutes to let the flavors meld.
- Finish the dish:
- Return the potatoes and sausage to the skillet. Stir everything together and heat for 2-3 minutes. Adjust seasoning with salt and pepper.
- Serve:
- Garnish with fresh parsley or dill, if desired, and serve warm.
