Preheat oven to 550°F.
Prepare a mixture of salt, pepper, and garlic powder and rub it into the meat. Place the meat in a shallow roasting pan, fat-side up. Roast at 550°C for 5 minutes per pound for RARE, or 6 minutes per pound for MEDIUM, and 7 minutes per pound for WELL-DONE.
Turn off the oven at the end of cooking time and DO NOT OPEN THE OVEN DOOR FOR TWO HOURS.
After 2 hours, remove the meat from the oven to slice; it will still be perfect.
It’s the same with roast beef. Try it; you won’t be disappointed.
