1. Preheat your oven to 350°F and prepare a baking sheet with parchment paper or a light grease.
2. In a large mixing bowl, combine sausage, Bisquick, cheddar cheese, milk, and freshly chopped chives.
3. Use your hands to thoroughly mix the ingredients until well incorporated.
4. Roll the mixture into 1-inch balls and place them on the baking sheet with space in between.
