1. Prepare the ribs:
Rinse the pork ribs under cold water and pat them dry with paper towels.
Place the ribs in a mixing bowl.
2. Marinate the ribs:
Add minced garlic, soy sauce, oyster sauce, sesame oil, sugar, cornstarch, white pepper, Shaoxing wine, and salt to the bowl with the ribs.
Mix well to coat each piece evenly.
Let the ribs marinate for at least 30 minutes, or up to 2 hours for deeper flavor.
3. Prepare for steaming:
Transfer the marinated ribs to a heatproof plate or shallow bowl that fits into your steamer.
Spread the ribs out in an even layer to ensure even cooking.
4. Steam the ribs:
Heat water in your steamer pot and bring it to a boil.
Place the plate of ribs into the steamer and cover with the lid.
Steam over medium-high heat for 25–30 minutes, or until the ribs are tender and cooked through.
5. Garnish and serve:
Remove the plate from the steamer carefully (it will be hot!).
Garnish with chopped green onions and serve immediately with steamed rice.
Tips for Success:
For extra flavor, add 1 tsp of fermented black beans or chili sauce to the marinade.
Use fresh, meaty ribs for the best results.
Ensure the steamer lid is tightly closed to trap the steam and cook evenly.
