Sweet and Savory Glazed Chicken Sausage and Potatoes

1. Preheat your oven to 400°F (200°C).
2. In a large mixing bowl, combine the diced potatoes with the olive oil. Toss until the potatoes are evenly coated with the oil.
3. Spread the seasoned potatoes in a single layer on a baking sheet. Sprinkle with salt and pepper according to your taste.
4. Roast the potatoes in the preheated oven for 20 minutes. Make sure to stir them halfway through for even cooking.
5. While the potatoes are roasting, prepare the glaze in another bowl. Whisk together the brown sugar, soy sauce, Dijon mustard, garlic powder, and onion powder until the mixture is smooth and well-blended.
6. After 20 minutes, remove the baking sheet from the oven and add the sliced chicken sausage to the potatoes.
7. Drizzle the prepared glaze over the sausage and potatoes. Toss everything together until well-coated with the glaze.
8. Return the baking sheet to the oven and continue roasting for an additional 15 to 20 minutes, or until the potatoes are tender and the sausage is caramelized and golden brown.
9. Just before serving, sprinkle fresh chopped parsley over the dish for added color and flavor.
