6. Transfer the beef mixture to a baking dish, and sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the top.
7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
8. Remove from the oven and let it cool slightly before garnishing with chopped cilantro.
9. Serve warm with tortilla chips or your choice of sides.

For a spicier kick, add some chopped jalapeños to the beef mixture. You can also substitute ground turkey or chicken for a lighter version. If you prefer a vegetarian option, simply omit the beef and add more beans or some sautéed vegetables like bell peppers and zucchini. For a creamier texture, mix in some cream cheese before baking.
