Lemon powder is dehydrated, finely ground lemon peel or lemon juice. It can be used in a variety of ways in the kitchen and beyond.
How to make it at home:
It is best to make it from untreated lemon peels.
Wash the lemon thoroughly under hot water and scrub the peel with a brush. Wipe dry.
Grate the lemon peel (only the yellow part, leaving the white, bitter layer).
Dry the lemon peel. There are several methods for this:
Air drying: Spread the grated peel in a thin layer on a baking sheet lined with parchment paper and leave at room temperature for a few days (up to a week) until it is completely dry and brittle.
Drying in the oven: Spread the peel on a tray and dry at low temperature (about 50-60°C), with air circulation, stirring occasionally, until completely dry. This can take a few hours. Be careful not to burn it!
Grind the dried peel. When completely dry, place it in a coffee grinder or a powerful blender and grind it into a fine powder.
Store in an airtight container. Store the finished lemon powder in an airtight container in a cool, dry place.
