  3. Pat chicken thighs dry with paper towels. Rub the herb mixture all over the chicken, ensuring even coverage.
  4. In a separate bowl, toss the vegetables with olive oil, oregano, salt, and pepper.
  5. Arrange chicken thighs skin-side up on the baking sheet. Scatter the prepared vegetables around the chicken.
