Preheat the oven to 400°F (200°C). Pierce potatoes with a fork and bake directly on the oven rack for 45-50 minutes until tender.
Once cooled slightly, cut potatoes in half and scoop out the flesh, leaving a small border.
In a bowl, mash the potato flesh with sour cream, cheese, bacon, salt, and pepper.
Stuff the potato skins with the mashed mixture, then place them on a baking sheet.
Drizzle with olive oil and sprinkle paprika (if using) over the top.
Bake for an additional 15-20 minutes, until golden and crispy on the edges.
Top with chopped green onions and serve.
