Prepare the fruit: Soak the dried and candied fruit in rum overnight for added flavor (optional).
Preheat the oven: Preheat the oven to 150°C (300°F).
Prepare the dough: In a bowl, cream the butter and brown sugar until creamy. Add the eggs one at a time while mixing.
Add the dry ingredients: Add the flour, baking powder, spices, and a pinch of salt. Mix until smooth.
Add the fruit and nuts: Stir in the candied fruit, raisins, and pecans. Gently mix to distribute the fruit evenly throughout the dough. Baking: Pour the batter into a cake pan lined with parchment paper. Bake for 1 hour 45 minutes to 2 hours. Let cool before removing from the pan.
Resting: Wrap the cake in plastic wrap and let it rest for 3 to 4 days to develop its full flavor before serving.
