- Toss cauliflower florets with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 15 minutes until slightly golden and tender.
- In a separate pan, cook diced chicken with garlic powder, oregano, salt, and pepper until fully cooked and lightly browned, about 6-8 minutes.
- For the cheese sauce, combine heavy cream, cheddar, mozzarella, Parmesan, cream cheese, garlic powder, and thyme in a saucepan. Heat over medium-low, stirring constantly until smooth and creamy.
- Layer the roasted cauliflower in the prepared baking dish. Top with cooked chicken pieces.
- Pour the cheese sauce evenly over the chicken and cauliflower.
- Sprinkle additional cheddar cheese on top and bake for 15-20 minutes until cheese is melted and bubbly.
- Remove from oven, garnish with fresh parsley, and let cool for 5 minutes before serving.
