1. Beat egg whites until stiff peaks form:
Start by placing the egg whites in a clean, grease-free bowl. Beat them with a hand mixer or a stand mixer on high speed until stiff peaks form. This may take a few minutes, so be patient!
2. Add sugar and vanilla sugar:
Add the sugar and vanilla sugar a spoonful at a time to the stiff peaks. Continue beating the mixture until glossy and well blended. The egg whites should remain firm and hold their shape.
3. Prepare the dough:
Take about 5 tablespoons of the egg white mixture and fill it into a piping bag. This will be used later for decoration.
Carefully mix the grated nuts into the remaining egg white mixture. Stir gently to prevent the egg whites from collapsing and to keep the mixture nice and fluffy.
4. Form the balls:
Using your hands or a tablespoon, form small balls of the nut mixture and place them on a baking sheet lined with parchment paper. Make sure to leave enough space between the balls, as they may expand slightly during baking.
5. Decorate:
Use the piping bag with the reserved egg white mixture to pipe a small dot of egg white onto each ball. Then place a hazelnut or almond on top of each dot. This not only gives the nut balls a beautiful appearance but also adds extra flavor.
6. Bake:
Preheat the oven to 120°C (fan oven). Bake the nut balls for about 30 minutes, until they are light golden brown and the surface appears dry. The inside should still be soft and tender.
