Prepare the dough:
Mix the flour, eggs, water, and salt in a large bowl until a smooth, sticky dough forms. Cover the dough and let it rest for about 30 minutes.
Form and cook the water sparrows:
Bring a large pot of salted water to a boil. Using a tablespoon, scoop out small portions of the dough and place them directly into the boiling water. As soon as the sparrows rise to the surface, they are cooked. Remove and keep warm in a bowl.
Toast the breadcrumbs:
Melt the butter in a pan and add the breadcrumbs. Toast until golden brown, stirring constantly.
Serve:
Sprinkle the toasted breadcrumbs over the warm sparrows. Serve with applesauce or apple compote.
