1. Place the butter and sugar in a bowl and beat with a hand mixer until creamy.
2. Add the egg and mix well.
3. Mix the flour and baking powder and slowly add to the butter and sugar mixture.
4. Add the lemon zest and juice, along with a pinch of salt, and mix everything into a smooth dough.
5. Shape the dough into small balls and place them on a baking sheet lined with baking paper.
6. Bake the cookies at 180°C (top/bottom heat) for about 10–12 minutes until lightly golden brown.
