Prepare the dough:
Beat the butter, sugar, and vanilla sugar with a hand mixer until fluffy. Add the eggs one at a time and mix well. Mix the flour with the baking powder and fold into the dough. Pour the dough into a greased or parchment-lined springform pan (approx. 26 cm in diameter) and spread evenly.
Prepare the apples:
Peel the apples, remove the cores, and cut into small pieces. Distribute the apple pieces evenly over the dough and press them in lightly. Bake the cake in a preheated oven at 180°C (top/bottom heat) for 15 minutes. Prepare the icing:
While the cake is pre-baking, mix the sour cream with the sugar and eggs until smooth. Remove the pre-baked cake from the oven and spread the sour cream icing evenly over the cake.
Finish baking:
Bake the cake for another 50 minutes, until the icing has set and is lightly golden brown.
Cool and decorate:
Remove the cake from the oven and let it cool completely. Dust with powdered sugar, if desired, and serve.
Tip:
For a special touch, sprinkle some cinnamon over the apples before pre-baking. The aroma of apples and cinnamon gives the cake a wonderfully autumnal flavor.
