1. Begin by spreading the softened butter on one side of each slice of sourdough bread.
2. In a small bowl, mix together the cream cheese, shredded cheddar cheese, diced jalapeños, crumbled bacon, and garlic powder until well combined.
3. Spread the cheese mixture evenly on the unbuttered side of two slices of bread.
4. Top with the remaining slices of bread, buttered side facing out.
5. Heat a skillet over medium heat and place the sandwiches in the skillet.
6. Cook until the bread is golden brown and crispy, about 3-4 minutes per side, and the cheese is melted and gooey.
7. Remove from the skillet, let cool slightly, then slice and serve warm.
Variations & Tips

For a milder version, use pickled jalapeños or reduce the amount of fresh jalapeños. You can also add a slice of tomato or avocado for extra flavor and texture. If you prefer a smokier taste, try using smoked cheddar or adding a dash of smoked paprika to the cheese mixture. For a vegetarian option, simply omit the bacon and consider adding some roasted red peppers for added depth.
