Spicy Cabbage and Potato Fritters Recipe

1. Microwave the Potatoes
Peel and dice the potatoes into small chunks. Place them in a microwave-safe bowl and cover them with a damp paper towel. Microwave for 7 minutes, or until the potatoes are soft and cooked through. Once done, mash them using a fork or potato masher and set aside.

2. Blanch the Cabbage
Boil water in a kettle or saucepan and pour it over the finely chopped cabbage in a bowl. Let it sit for 1-2 minutes to soften, then drain any excess water and set the cabbage aside.

3. Prepare the Onion and Seasoning
Finely chop the onions and add them to the mashed potatoes along with black pepper, salt, and chili powder. Mix well to combine.

4. Make the Fritter Batter
Add the blanched cabbage to the mashed potatoes and mix. Crack in 1 egg and stir to combine. Gradually add 5 tablespoons of fry flour (or all-purpose flour) to the mixture and mix until everything is well incorporated.

5. Fry the Fritters
Heat a frying pan over medium heat and add enough cooking oil to coat the bottom. Scoop spoonfuls of the fritter mixture and drop them into the hot oil, flattening them gently with a spatula. Fry the fritters for about 4-5 minutes on each side, or until they’re golden brown and crispy.

6. Drain and Serve
Once the fritters are crispy and cooked through, transfer them to a plate lined with paper towels to drain any excess oil. Serve warm.
