1. Chop the onion into small cubes.
2. Cut the carrots and peppers into thin strips.
3. Cut 2 celery stalks into small cubes.
4. Pour oil into a saucepan and fry the onion for 1-2 minutes. Then add the carrots and after a minute, add the rest of the chopped vegetables.
5. Pour water, cover with a lid, and bring to a boil.
6. Dice 1 potato and chop the parsley.
7. Grate half of the onion into the minced chicken and season with salt and pepper.
8. Separate the yolk from the white, adding the egg white to the minced meat and setting the yolk aside.
9. Mix the minced meat well with your hands, form small meatballs, and roll them in flour.
10. Add potatoes, 80 grams of rice, meatballs, parsley, salt, and pepper to the soup.
11. Cook for 20 minutes over medium heat.
12. For the dressing, mix 3 tablespoons of yogurt with the egg yolk and add to the soup.
13. Stir and pour the finished soup into plates and serve.
