Savory Mashed Potato Nests with Ground Beef and Cheese

Brown the beef
In a large skillet, heat a bit of oil over medium-high heat. Add the ground beef and let it sear undisturbed for 2–3 minutes. Stir and break it up with a spatula. Once browned, add the chopped onion.

Season and simmer
Add salt, pepper, garlic powder, and paprika to the pan. Stir well. Pour in the marinara sauce and simmer on medium-low heat for about 5 minutes, or until thickened and flavorful. Remove from heat and set aside.

Boil the potatoes
Place chopped potatoes in a large saucepan. Add just enough water to cover and 1 tablespoon of salt. Bring to a boil, then simmer for 15–20 minutes or until fork-tender.

Mash the potatoes
Drain the potatoes well. Add butter, a pinch of salt, fresh chopped dill, and Parmesan  cheese. Mash until creamy and smooth. Let cool slightly before handling.

Form the nests
Scoop 2–3 tablespoons of mashed potatoes and roll into a ball. Place onto a parchment-lined baking tray or greased dish. Press the center gently with a spoon or your fingers to form a shallow “nest.”

Fill the nests
Sprinkle each nest with a little shredded cheese. Spoon 2–3 tablespoons of the beef mixture into each potato nest. Top with more shredded cheese.

Bake
Preheat your oven to 400°F (200°C). Bake the nests for 10–12 minutes or until the cheese is melted and slightly golden.

Garnish and serve
Remove from oven and sprinkle with fresh herbs if desired. Serve warm with a simple salad or roasted vegetables on the side.
