The Creamy Spinach Stuffed Flank Steak Pinwheels

Ingredients:

1.5 lbs (680g) flank steak
Salt and pepper to taste
2 tablespoons olive oil, divided
3 cloves garlic, minced
5 oz (140g) fresh spinach
4 oz (115g) cream  cheese, softened
1/2 cup grated Parmesan cheese
1/2 teaspoon red pepper flakes (optional)
1/2 cup shredded mozzarella cheese
Toothpicks or kitchen twine

Instructions:

Prepare the Steak:

Preheat your oven to 375°F (190°C).
Place the flank steak on a cutting board and butterfly it by slicing horizontally through the middle, being careful not to cut all the way through. Open it like a book. Use a meat mallet to pound it to an even thickness. Season both sides with salt and pepper.
