Step 1: Prepare the Potatoes
- Wash and Cut : Peel (optional) and cut the potatoes into even-sized strips.
- Soak in Vinegar Water : In a large bowl, mix 1 part vinegar to 3 parts water. Soak the potato strips for at least 30 minutes. For better results, soak for up to 2 hours.
Step 2: Rinse and Dry
- Rinse : After soaking, drain and rinse the potatoes under cold water to remove excess vinegar.
- Dry Thoroughly : Pat the potato strips dry with paper towels or a clean kitchen towel. This step is crucial for achieving crispness.
- Step 3: Frying
- Heat the Oil: In a deep fryer or large pot, heat oil to 350°F (175°C).
- First Fry (Blanching): Fry the potatoes in batches for about 5-6 minutes until they are soft but not browned. Remove and drain on paper towels.
- Cool: Let them cool for about 30 minutes.
- Increase Oil Temperature: Raise the oil temperature to 375°F (190°C).
- Fry Again: Fry the blanched potatoes again in batches for 2-4 minutes until golden brown and crispy.
- Drain and Season: Remove the fries, drain on paper towels, and season with salt while hot.
