Directions:
1. Prepare the Crust:
– Preheat oven to 350°F (175°C).
– In a small bowl, mix graham cracker crumbs with melted butter.
– Press the mixture firmly into the bottom of a 9-inch pie dish to form the crust.
2. Make the Cream Cheese Layer:
– In a large bowl, beat cream cheese and sugar until smooth.
– Add vanilla extract and eggs, one at a time, beating well after each addition.
– Pour the cream cheese mixture over the graham cracker crust.
3. **Prepare the Sweet Potato Layer:
– In another bowl, combine mashed sweet potatoes, sugar, cinnamon, nutmeg, ginger, cloves, and egg.
– Mix until smooth and well blended.
– Carefully spread the sweet potato mixture over the cream cheese layer.
4. Bake the Pie:
– Bake for 45-50 minutes, or until the center is set and a toothpick inserted comes out clean.
5. Cool and Serve:
– Allow the pie to cool completely before serving.
– Top with whipped cream and crumbled graham crackers before serving.
