- Preheat oven to 350°F (175°C).
- Cook the beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
- Add seasoning: Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
- Mix in Rotel and beans (if using). Stir well and let cook for 2 minutes.
- Layer the casserole:
- In a greased 9×13-inch baking dish, spread half of the crushed chips.
- Pour the beef mixture over the chips.
- Spread sour cream and salsa evenly over the top.
- Sprinkle with shredded cheeses.
- Bake uncovered for 15-20 minutes or until the cheese is melted and bubbly.
- Top and serve: Sprinkle the remaining crushed chips over the casserole. Garnish with lettuce, tomatoes, black olives, and green onions.
