  1. Preheat oven to 350°F (175°C).
  2. Cook the beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  3. Add seasoning: Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
  4. Mix in Rotel and beans (if using). Stir well and let cook for 2 minutes.
  5. Layer the casserole:
    • In a greased 9×13-inch baking dish, spread half of the crushed chips.
    • Pour the beef mixture over the chips.
    • Spread sour cream and salsa evenly over the top.
    • Sprinkle with shredded cheeses.
  6. Bake uncovered for 15-20 minutes or until the cheese is melted and bubbly.
  7. Top and serve: Sprinkle the remaining crushed chips over the casserole. Garnish with lettuce, tomatoes, black olives, and green onions.
  8. Enjoy! Serve with extra sour cream, salsa, or guacamole.
