Hearty Potato, Beef, and Mushroom Casserole

Return the browned beef to the skillet.
Sprinkle the flour over the mixture (if using) and stir well to coat the meat and vegetables. This helps thicken the sauce as it cooks.
Pour in the beef broth (and adjust if using wine) and bring the mixture to a gentle simmer.
Let it simmer for about 10 minutes, stirring occasionally, so the flavors meld. (The sauce should start to thicken slightly.)
Parboil the Potatoes:
While the beef simmers, place the potato rounds or chunks in a large pot and cover with cold water.
Add a generous pinch of salt and bring to a boil.
Parboil the potatoes for 5 minutes; they should be just starting to soften but still hold their shape. Drain well.
Assemble the Casserole:
If your beef mixture is not already in an oven-safe dish, transfer it to a greased 9×13-inch casserole dish.

Drizzle a little olive oil over the potatoes and season lightly with salt and pepper.
If desired, sprinkle the shredded  cheese evenly over the top.
Bake:
Cover the casserole with aluminum foil and bake in the preheated oven for 1.5 to 2 hours. The beef should be tender and the potatoes cooked through.
In the final 10–15 minutes of baking, remove the foil to allow the cheese topping (if using) to melt and become bubbly and lightly golden.
Finish & Serve:
Once done, remove the casserole from the oven and let it rest for 5–10 minutes.
Garnish with freshly chopped parsley before serving.
