These Cheesy Potato and Chicken Muffins are the perfect savory snack or appetizer. Packed with creamy mashed potatoes, flavorful chicken, mushrooms, and gooey cheese, they’re a fun and delicious way to enjoy comfort food in muffin form.

Ingredients
5–6 medium potatoes, boiled and mashed
150 g (5.3 oz) cooked chicken, shredded or diced
200 g (7 oz) mushrooms, chopped
150 ml (⅔ cup) heavy cream (33%)
100–200 g (3.5–7 oz) cheese, grated
1 medium onion, finely chopped
4–6 cloves garlic, minced
2 tbsp butter, for cooking
1 tsp basil
1 tsp paprika
Salt, to taste
Fresh dill, chopped, for garnish
Directions
Step 1: Prepare the Potatoes
Peel, boil, and mash the potatoes until smooth.
Season with salt, a pinch of paprika, and a little butter for flavor. Set aside.
Step 2: Cook the Chicken and Mushrooms
Heat 1 tbsp butter in a skillet over medium heat.
Add the chopped onion and sauté until translucent.
Stir in the mushrooms and garlic, and cook until soft and golden.
Add the cooked chicken, season with basil, paprika, and salt, and stir well.
Pour in the cream and simmer for 2–3 minutes until thickened. Remove from heat.
Step 3: Assemble the Muffins
Preheat your oven to 180°C (356°F).
Grease a muffin tin or line it with muffin cups.
Press mashed potatoes into each muffin cup, creating a base and shaping a hollow in the center for the filling.
Spoon the chicken and mushroom mixture into the potato cups.
