Plus, it’s simple to make with ingredients you probably already have in your pantry. Let’s dive into how you can make this Easy and Delicious Oatmeal Apple Cake!
Ingredients:
2 apples, peeled, cored, and chopped (choose a sweet-tart variety like Granny Smith or Fuji)
1 1/2 cups rolled oats
1 cup all-purpose flour
1/2 cup brown sugar (you can use granulated sugar, but brown sugar gives a deeper flavor)
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk (or any plant-based milk)
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg (optional, for extra warmth)
1/4 cup chopped walnuts or pecans (optional, for added crunch)
Instructions:
Prepare the Oven and Pan: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or an 8×8-inch square baking pan. You can also line the bottom with parchment paper to make it easier to remove the cake after baking.
Make the Oatmeal Mixture: In a small bowl, combine the rolled oats with the milk and set aside for 10 minutes. This step allows the oats to soften and absorb the liquid, creating a nice, moist texture for your cake.
Prepare the Apples: Peel, core, and chop your apples into small chunks. You want them to be small enough so that they bake evenly into the cake but not so tiny that they dissolve into the batter. Set the apples aside.
Mix the Wet Ingredients: In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. You can use a hand mixer or a stand mixer for this step. Once creamed, add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well mixed.
Combine Everything: Gradually add the dry ingredients to the wet mixture, alternating with the soaked oats and milk. Start with a little of the dry ingredients, followed by some of the oat mixture, and continue until all ingredients are combined. This will help keep the batter from being too thick.
Fold in the Apples and Nuts: Gently fold the chopped apples and, if using, the chopped walnuts or pecans into the batter. Be careful not to overmix so that the apples stay intact and don’t get crushed into the batter.
Bake the Cake: Pour the batter into your prepared cake pan and spread it evenly. Place the pan in the oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown on top and slightly firm to the touch.
Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. You can dust the top with a little powdered sugar for a simple fin
ishing touch, or serve it as-is for a more rustic look.
