In a mixing bowl, whisk together the warm milk, sugar, and instant yeast. Let it sit for 5-10 minutes until frothy.
Add flour, salt, olive oil, and the egg (if using). Mix until the dough starts coming together.
Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
Make the Cheesy Spinach Filling:
Heat butter in a pan over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Add the chopped spinach and cook until wilted (about 2-3 minutes).
Season with salt, black pepper, oregano, and red pepper flakes. Remove from heat and let it cool slightly.
Stir in shredded mozzarella and Parmesan cheese, mixing well.
Shape the Bread:
Preheat the oven to 375°F (190°C).
Roll out the dough into a rectangle on a floured surface (about 1/2 inch thick).
Spread the spinach and cheese filling evenly over the dough, leaving a small border around the edges.
Roll the dough tightly into a log, like a jelly roll. Pinch the edges to seal.
Bake the Bread:
Place the rolled bread onto a greased or parchment-lined baking sheet.
Brush the top with melted butter mixed with garlic powder.
Bake for 25-30 minutes, or until the bread is golden brown and crispy on the outside.
Remove from the oven and brush with more butter for extra flavor.
