Directions
Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
In a large mixing bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the milk, mixing until combined.
In a separate bowl, whisk together the flour, baking powder, salt, and 1 tablespoon of cinnamon.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
In a small bowl, mix together 1/4 cup of sugar and 1 teaspoon of cinnamon. Sprinkle this mixture evenly over the top of the batter.
Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Variations & Tips
For a richer flavor, try adding a handful of chopped nuts, such as walnuts or pecans, to the batter. You can also incorporate dried fruits like raisins or cranberries for added texture. If you prefer a more pronounced cinnamon flavor, increase the cinnamon in the batter to 1.5 tablespoons. For a healthier version, substitute half of the all-purpose flour with whole wheat flour, and replace the granulated sugar with coconut sugar or honey.
