Preheat the oven to 180°C.
Prepare a muffin tin and line it with paper liners.
2️⃣ Mix dry and wet ingredients
In a bowl, mix the flour, baking powder, baking soda and salt.
In another bowl, beat the eggs with the sugar, then add the oil, milk, vanilla and lemon zest.
Pour the two mixtures together and mix until smooth.
3️⃣ Adding peaches
Drip the peach pieces in a little flour (so they don’t sink to the bottom of the batter).
Carefully mix into the batter.
4️⃣ Baking
Pour the mixture into muffin tins, filling them about ¾ full.
Bake for 18-22 minutes, until golden and the tops are slightly cracked.
5️⃣ Serving
Let cool, then dust with powdered sugar or drizzle with a little lemon glaze (a mixture of powdered sugar + lemon juice).

✔ For an even more lemony flavor, add a tablespoon of lemon juice to the batter.
✔ If you want a crunchier texture, sprinkle coarsely chopped almonds or walnuts on top.
