Preheat Oven & Prepare Pan:
Preheat oven to 350°F (175°C).
Lightly spray a glass baking dish with cooking spray.
Cook the Beef:
In a skillet over medium heat, cook the ground beef until browned.
Drain excess grease, then add taco seasoning and cook according to package instructions.
Assemble the Nachos:
Lay the chopped bell peppers evenly in the prepared baking dish.
Spread the cooked taco-seasoned beef over the peppers.
Drizzle taco sauce over the beef.
Sprinkle 1 cup of the shredded Mexican cheese on top.
Add chopped onions, tomatoes, and additional chopped bell peppers.
Sprinkle the remaining ½ cup of cheese on top.
Bake:
Place the dish in the oven and bake uncovered for 15 minutes, or until the cheese is melted and bubbly.
Serve & Enjoy:
Remove from the oven and let cool slightly before serving.
