1Prepare the Vegetables
Slice the cucumbers and carrots, and place them in a large bowl.
Add the chopped fresh dill and red onion if using.
2Make the Dressing
In a separate bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, vinegar, honey, Dijon mustard, garlic, salt, and black pepper until smooth.
3Combine & Toss
Pour the dressing over the vegetables and toss until well coated.
4Chill & Serve
Cover and refrigerate for 15-30 minutes to allow the flavors to meld.
Garnish with extra dill and serve cold.
