Ingredients (makes 8 bagels)
For the dough:
3 1/2 cups bread flour (for extra chew) 
2 tsp instant yeast 
1 tbsp sugar 
1 1/4 cups warm water (not too hot) 
1 1/2 tsp salt 
For boiling:
2 liters water 
1 tbsp baking soda (for that crispy crust!) 
Toppings (optional):
Sesame seeds 
Poppy seeds =
Everything seasoning 
Coarse salt
